Easy Potatoes Salad | Ensalada Rusa

Perfect for the busy holidays, this creamy make-ahead Ensalada Rusa( Potatoes Salad) can be prepared two days ahead of time. Potatoes Salad is a standard accompaniment to most Paraguayan meals, especially Milanesa de Carne.

They’re very simple to make; boil the potatoes, and mix them with mixed vegetables and mayo. There are endless variations made with different vegetables, but the base is always diced potatoes and mayo.

What you need for the Potatoes Salad

  • 8 large russet potatoes, peeled and cut into 1-inch cubes
  • 1 cup sliced jarred or canned beets, cut into 1-inch cubes, optional
  • 2 cups frozen mixed vegetables, defrosted and drained 
  • 1 large white or red onion, cut in half and finely sliced.
  • 1/2 cup mayonnaise, to taste
  • 1/4 cup finely chopped parsley(optional)
  • 4 scallions, thinly sliced
  • Kosher Salt to taste

How to prepare The Potatoes Salad

Put the potatoes in a large saucepan and add enough cold water to cover by 1 inch. Season the water generously with salt. Bring to a boil over medium-high heat, then immediately reduce the heat to a gentle simmer and cook until the potatoes are tender about 10 minutes. Drain the potatoes and transfer them to a large bowl. 

Mix the mixed vegetables, parsley, scallions, onion, and beets, if using. Add the mayonnaise and toss the potatoes mixture to combine; season with additional salt and pepper, if needed. Cover with plastic wrap and refrigerate until chilled and to let the flavors meld, about 30 minutes. Once ready to serve, garnish with more parsley.

Serve chilled alongside a Crispy Milanesa de Carne!
